Today I came downstairs and my bananas aged like 30 years overnight. They were brown, spotted, and super soft. Aka no bueno to snack on.

The good thing about bad bananas is that they're perfect for baking. When one door closes, am I right??? Their texture and sweetness makes things like banana bread extra delicious.

After buying a shiny new cupcake tray at Target the other day (no, I didn't go in looking for one, and no, I never come out of that dang store empty handed), I decided to put that, as well as my ripe bananas, to use in this banana bread muffin recipe.

How to Make Wax Paper Liners:

  1. Cut wax paper into about 5" by 5" squares
  2. Place one over one of the cups in the cupcake tray
  3. Using a jar, or something that will insert into the cup of the tray (I used a 1/4 measuring cup), push the wax paper into the cup and hold it there so a little wax paper cup forms
  4. Take out and the wax paper cup should be formed to the cupcake tray
  5. Pour batter in about 3/4 full, top with chocolate chips, and bake normally
     

What You'll Need:

Whole wheat flour, baking soda, sea salt, cinnamon, ripe bananas, eggs, apple sauce, honey, creamy nut butter, coconut oil, melted, dark chocolate chips, YOUR LOVEEE

Ingredients:

  • 2 cups whole wheat flour
  • 3/4 tsp. baking soda
  • 3 pinches sea salt
  • 1 tbsp. cinnamon
  • 3 overripe bananas, mashed
  • 2 eggs
  • 2 heaping tbsp. apple sauce
  • 1/4 cup honey
  • 3 tbsp. creamy nut butter
  • 1/3 cup coconut oil, melted
  • 1/2 cup dark chocolate chips
     

Directions:

  • Pre heat oven to 350 F and line a cupcake tray with liners (or see how to make wax paper nests above)
  • In a small bowl, mix the whole wheat flour, baking soda, salt, and cinnamon together
  • In a large bowl, add the mashed bananas, eggs, apple sauce, honey, nut butter, and coconut oil and mix until smooth
  • Add the dry mixture to the large bowl and mix until smooth. Try not to over-mix. Fold in the chocolate chips, but save some to top them with
  • Pour mixture into muffin liners. I filled mine 3/4 full, but they do rise slightly. Top with any extra chocolate chips, nuts, or seeds
  • Place in oven, and bake for about 21-24 minutes, or until golden brown and when toothpick inserted, it comes out clean
  • Enjoy! Can be frozen to enjoy later on
