Creamy Cashew Pasta Sauce

  • 1/3 cup soaked cashews
  • 1/2 cup baked sweet potato
  • 1/2 cup unsweetened almond milk (plus more after blending)
  • 1 tbsp. nutritional yeast
  • Garlic + sea salt
  • Olive oil


  • Blend cashews, sweet potato, almond milk, nutritional yeast, and seasonings until smooth
  • While blending, slowly pour in olive oil until mixture becomes fluffy and less grainy
  • Mixture will be thick, so while it's still blending, slowly drizzle in more almond milk until thin
  • When it cooks, it will thicken, so it's okay if its slightly more thin than you prefer
  • Set sauce aside, and saute broccoli and season well
  • Cook 8 oz pasta (I used red lentil)
  • Place pasta in the same pan as the broccoli and add in sauce
  • Mix well, heat over low
  • Season once more with salt, pepper, and whatever else you'd like and serve!
