Almond Crusted Chicken



  • 1 lb. chicken
  • Coconut oil
  • 2/3 cup almond flour (can process whole almonds to a flour)
  • 1/2 cup shredded parmesan (grated doesn't work as well)
  • 1-2 tbsp. dijon mustard
  • Salt, pepper, other seasonings of choice


  • In a shallow bowl, mix the almond meal, parmesan cheese, and seasonings until even
  • With your hands, lightly coat each chicken breast with dijon mustard
  • Place the coated chicken breast in the almond meal/parmesan mixture and generously coat each side
  • In a large skillet, heat 2 tbsp. coconut oil over medium heat
  • Once hot, place chicken in skillet and cook for 3-4 minutes on each side, or until cooked thoroughly
  •  Top with any leftover almond meal or parmesan cheese and enjoy!
